Weeknight Meals


Finally, brown rice that the kids will eat!


Texmati Brown Rice

I've been trying different kinds of brown rice to add fiber, protein and other nutrients to our diet and have finally found one my kids will eat.  The rice is mild but flavorful and has similar texture to that of white rice.  It smells wonderful and is very tasty.  The recipe is simple to make (recipe on the container and below) and I can easily work it into our weekly meals.  Just yesterday, I served it with chicken teriyaki and edamame and the kids loved it!  


1 cup Texmati brown rice
2 1/2 cup water
1/2 teaspoon salt
1 teaspoon of butter 


Cooking method:

Combine all ingredients in a medium saucepan and bring to boil.  Stir once, cover and simmer for 45 minutes.  Remove from heat and let stand for 5-10 minutes longer.  Alternatively, you can cook it in an electric rice cooker.  I just combine all the ingredients in the pan, choose "soft" white rice setting and 50 minutes later it's done.  What other ways have you tried cooking your brown rice?



Amazing Artichoke & Caper Bread Spread & Dip

While at the checkout counter at a local grocery store the other day, I saw this Artichoke & Caper Bread Spread & Dip and decided to try it out. I was hungry, having rushed out of the house without breakfast, and I simply couldn’t wait to get home and make a ham sandwich with this spread. I started by spreading it on sliced and slightly toasted rustic bread and then added a couple of slices of ham and Parmesan cheese. It was deliciously mild, full of flavors with a “kick” but not at all spicy. So yummy! Since then, I’ve served it on baguettes, added to cooked spaghetti pasta for our “Meatless Monday” meals, and to omelets for our weekend brunch. It has become a stable in my pantry and I can't wait to try other bread dips by this company. Jazz-up our next meal in a pinch with this spread and enjoy!

I’m passionate about food and I love Chef Michael Mina’s new “Cook Taste Eat” website (! His videos are great resource to watch as you learn to apply Michelin-starred chef techniques easily into your everyday cooking repertoire. I’m looking forward to trying many meals from his website; but can’t wait to try his Grilled Cucumber Onion and Tomato Salad. Enjoy!



Meals featuring exotic new flavors

This week’s meals are inspired by a few new recipes.  We’ll start the week by substituting tofu for chicken in the Thai Basil Stir-Fry for our Meatless Monday meal since we usually love tofu in our Thai dishes.  Later in the week, I’m excited to try to make the exotic-tasting Moroccan Chicken Stew, the avocado and orange salsa for the salmon, and the corn bread in a skillet.  With all these new recipes to try, it will be a fun week in the kitchen. What's cooking this week

To start off the week, we'll have our Meatless Monday meal followed by 4 easy dinners.  I always try to plan for meals that I can quickly prepare while the kids are at school and then toss in the oven or on the grill later in the evening.  This week's meals are inspired by recipes circulating on Pinterest.  Have a great week!
